Twice Baked Potatoes


4 large Russet Potatoes, scrubbed clean
4 Tbsp. Butter
1/2 cup Sour Cream
6 oz. Cheddar Cheese, grated
8 strips Bacon, cooked crisp & crumbled
Salt & Pepper to tast
Preheat oven to 400 degrees. Poke potato skins several times with a knife and bake on a foil lined cookie sheet for about 1 hr. or until tender. Remove from oven. Cut off 1/4 on each potato. Scoop out potato, leaving a shell with skin. Mash the potato flesh with butter, sour cream and cheese. Stir in bacon and pile stuffing back into skins. Return to oven and bake 20 min. or until brown on top and piping hot.
